A super healthy, nutritious treat for breakfast, and it is really easy to make extra for a mid afternoon snack or a healthy pudding.

The blue spirulina gives the chia pudding and smoothie a real vibrancy so use a clear glass or jar to show off your layers.

💙 blue vanilla chia pudding at the bottom… 1 cup of almond milk, 25g chia seeds, 1 tsp vanilla extract and 1/2 tsp blue spirulina, stirred together and left overnight in the fridge⁠⠀

💙  vanilla yoghurt middle layer⁠… you could also use coconut or Greek yoghurt, in the picture we used the Alpro vanilla yoghurt

💙 blueberry, coconut smoothie top layer… a thick smoothie made from a handful of frozen blueberries, 1 frozen banana, 2 cups of coconut yoghurt and 1 tsp blue spirulina⁠⠀

And you can sprinkly some desiccated coconut or cacao nibs on the top to finish it off. A pretty, plant-based breakfast full of nutrients and plenty of goodness to fill you up too.
